There was a "master plan" (is that more than an artist's impression?) for Playford Alive when it started a decade ago. Newton Boulevard was drawn all the way through to Stebonheath Road and should have been built 6-8 years ago. Curtis Road is the main road past the suburb, but it's also the only current local connection between residential Munno Para West and the schools and shops in Playford Alive-Munno Para. I imagine that completing Newton Boulevard will have an impact on the heavy school-hour traffic by adding another way to/from Mark Oliphant College and Adelaide North Special School.

Fair enough that they didn't want to rush into things and overbuild for what might not happen, there is instances in Elizabeth area i.e Harvey Road and Blackburn Road was built wide. Neither came main roads.

Even one carriageway through an otherwise undeveloped (and yet-to-be-subdivided) paddock would have helped with traffic issues.

X Convenience has been dropped from the development on the corner of Curtis Road and Main North Road (the old Munno Para Bowling Club). Instead we will get drive through "First Things First Coffee", another drive through eatery, another "restaurant with outdoor dining" next to Lone Star and a motor repair/tyre place.

It feels like a very strange place to put a drive-through coffee shop. I guess I'm not its target market, but it feels like it's in a development on the wrong side of both roads, and within the development, it's too far from the entrance/exits.
It seems like a reasonable site for the bulky goods shops - Sydney Tools, Pet Barn, whatever is coming soon in the yellow and black building. Lone Star seems to be busy despite it being where almost all customers have to come by private car. I haven't seen whether BurgerTec or Zambrero are busy.

The parking spaces is under capacity too especially considering the growing population in the Playford LGA. The centre should had been multistorey like Bunnings Windsor Gardens whereby the parking is undercover

The population of the LGA doesn't matter, only the expected concurrent customer load. Some car parks usually have vacant spaces (i.e. larger than necessary) and others almost always full. Anecdotally, so far there have always been vacant parks when I've gone to Lone Star, so I'd say the car park is "large enough". There is at least one other further down Curtis Road in the "main street area" that isn't quite big enough at certain times,

More than two hectares of “unprecedented renewal” will be delivered under a $200 million redevelopment plan from the City of Salisbury to upgrade its city centre.

Not saying the development is not welcome but one of the largest parts of it will be a 500 space multideck carpark.
