I think those sticks at the bridges are formed that way to commemorate the bent poles along North Terrace.
Or the old stobie poles which used to lean at odd angles along South Road, between port and Torrens Roads

Hang on those ugly brown piles are coming down once this is done right ? They look so awful. The landscaping needs to hurry up already. The area is needing it now that it’s finishing up.

Landscaping will probably get done once the road is opened or close to opening.

Correct - landscaping is the final part of the project.

I think there should be a monument to honour all the trucks that hit stobie poles while driving in the left lane on the T2T.

'The more things change, the more they stay the same.' This couldn't be truer here - the sign on the old stretch of South Road here was 'trucks use must use inside lane' in case they clipped a Stobie or overhead wiring.

No, they aren't.
Further along there's similar poles erected that look like some sort of "shelter" or something overhanging the footpath/road..

Stephan Knoll confirmed today that the Pym Street to Regency Road corridor won't be completed until 2022, with full construction not to start until 2020.

Do we have any other big projects about to start to occupy the team that will finish T2T later this year? Darlington and Northern Connector are both due to be completed by the end of next year and the original pipe dream was to have the entire corridor completed in 2023, but it was never clear that sufficient planning and preparation has been getting done on "the hard bits" to meet that deadline.

Unless there's a plot twist and we suddenly get a surprise packet of funding, then Darlington and the NC are all there is in terms of large scale road projects. There's Gawler line electrification beyond this.
The original idea of a corridor upgrade had a finish timeline of 2020. It's not really poor planning that has seen it taking so long, but more the decline of Infrastructure Australia. That was a body that was supposed to take politics out of infrastructure funding allocation, but this went downhill. Where we got screwed was with IA's constantly changing business case requirements, while the eastern states had money thrown at them in the billions even without a clear plan.
